Edinburgh Pop-Ups

I’m so excited to share that Nica’s Panaderya will be popping up in Edinburgh every month until the end of the year! Along with our sister business Harana.

I’ve definitely been in a bit of a rut lately, making the same things for orders and the same stock for stores. So these pop-ups are giving me an excuse to have fun again and create new flavours and bakes that I might not normally get to make.

We’re kicking things off at The Cookbook Shop on Saturday 29th August, 11am–6:30pm. It’s an independent bookshop all about food, cookbooks and inspiration. They do cooking workshops by the authors, inspiring book readings and food pairing classes. So, it felt like the perfect place for our first Edinburgh pop-up.

And because it’s our first one, I wanted to do something a little special. The first 30 customers will get a free chocolate crinkle cookie, the cookie that started it all.

Around 7 years ago, my fiancé told me chocolate crinkles were his favourite. On a whim, I made some for him, and I honestly had no idea where that little batch of cookies would eventually lead.

Then Covid happened, and I found myself wanting to start my own business. Those chocolate crinkles became one of the first things I made, and somehow, Nica’s Panaderya grew from there.

So it feels pretty special to bring the cookie that started it all to our very first Edinburgh pop-up.

I’ll also be bringing some new and existing bakes, with a big focus on summer flavours because I’m still clinging onto summer! Plus, we’ll have our exclusive cold foam drinks to go with them from our Harana brand.
