Our Small Batch Laminated Pastry Collection
At Nica's Panaderya, we're always looking for ways to celebrate Filipino flavours while continuing to grow and challenge ourselves as bakers.
Today, I'm so excited to finally share something I've been dreaming about for a long time, our first small batch laminated pastry collection.
If you've followed our journey for a while, you might not know that I actually attempted laminated pastries a few years ago. The vision was there, but the skills and experience weren't. Laminated pastry is widely regarded as one of the most time-consuming, technical, and challenging areas of baking. It requires patience, precision, consistency, and countless hours of practice.
At the time, I simply wasn't ready.
Since then, I've spent years learning, researching, practising, and refining my techniques. Even now, I'm still learning every day, but I've finally reached a point where I'm happy with what I'm creating and ready to share it with all of you.
This collection is for everyone who has supported Nica's Panaderya from the beginning. Every order, every message, every recommendation, and every visit has allowed me to continue growing as a baker and pursuing new ideas. Thank you for making this possible.
One of the most inspiring parts of this journey has been discovering incredible Filipino-inspired bakeries around the world. Seeing how other bakers celebrate our culture through pastries, desserts, and innovative flavour combinations has inspired me immensely. Their creativity has encouraged me to explore Filipino flavours in new ways while finding my own voice through baking.
While we're starting with this collection, I already can't wait to continue developing new products and creating even more flavours in the future.
So, I'm proud to introduce our first small batch laminated pastry collection:
Leche Flan Danish
Our take on a Danish pastry, featuring delicate buttery layers filled with a rich yema layer and topped with a slice of silky leche flan. A pastry inspired by one of the Philippines' most loved desserts, bringing together crisp laminated pastry and familiar nostalgic flavours.
Calamansi Tart
A laminated pastry tart filled with our vibrant and tangy calamansi filling, finished with toasted meringue and fresh lime zest. Bright, citrusy, and perfectly balanced between sweet and sharp.
Ensaymada Cruffin
A croissant baked in muffin form, showcasing beautiful layers of laminated pastry. Once baked, it's coated in sugar and topped with sweet buttercream and grated cheddar cheese, inspired by the beloved Filipino ensaymada.
Milo Pain Suisse
Our Filipino-inspired twist on the classic pain suisse. Layers of laminated pastry are filled with a rich Milo chocolate filling and finished with a dusting of nostalgic Milo powder.
Alongside the laminated pastry collection, we'll also be introducing two brand new additions to the Nica's Panaderya menu:
Brown Butter Banana Bread with Langka
A rich brown butter banana loaf filled with pieces of sweet langka (jackfruit), topped with cream cheese frosting, a yema drop, and a toasted cinnamon banana slice. Comforting, indulgent, and packed with flavour.
Ube Buko Basque Cheesecake
Our signature Basque cheesecake reimagined with Filipino flavours. A creamy ube Basque cheesecake sits atop a layer of buko filling, complete with fresh young coconut meat for added texture and flavour.
We're excited to announce that this collection will officially launch at Barrio Fiesta Glasgow on 27 June, where you'll be among the very first to try it.
As a small batch collection, quantities will be limited. Each pastry takes time, care, and attention to produce, and we wanted to focus on quality above all else as we introduce this new range.
This launch represents years of learning, plenty of trial and error, countless hours of research, and a genuine desire to continue growing as a baker. To finally be able to share these products feels incredibly rewarding.
And this is only the beginning.
We're already working on exciting new products and exclusive creations that will eventually be supplied through our sister business, Harana Coffee. There are plenty of exciting things on the horizon, and we can't wait to share more when the time is right.
